Chicken, kiwi and coriander salad


  • 2 chicken escalopes
  • 1 clutch of fresh coriander
  • 3 kiwis which aren’t too ripe yet
  • Lime juice
  • 2 tablespoon of olive oil
  • 1 chicken stock cube
  • Salt
  • Cayenne pepper


  • Cook the chicken breasts for 15 minutes in chicken stock.
  • Let cool prior to cutting into small cubes.
  • While the chicken’s cooling, peel and cut the kiwis into cubes as well. Chop the coriander.
  • Mix all of the ingredients together and serve.
