- 2 chicken escalopes
- 1 clutch of fresh coriander
- 3 kiwis which aren’t too ripe yet
- Lime juice
- 2 tablespoon of olive oil
- 1 chicken stock cube
- Cayenne pepper
- Cook the chicken breasts for 15 minutes in chicken stock.
- Let cool prior to cutting into small cubes.
- While the chicken’s cooling, peel and cut the kiwis into cubes as well. Chop the coriander.
- Mix all of the ingredients together and serve.
