Courgette, parmesan and pine nut salad


  • 2 courgettes
  • 20g of pine nuts
  • 40g of parmesan
  • 4 tablespoons of oil
  • Salt
  • Pepper
  • Lemon juice (optional)


  • Carefully wash the courgettes, then cut them into strips using a vegetable peeler.
  • Add the salt, pepper and the olive oil. Place in the fridge and let marinate for 1 hour.
  • Sprinkle with the grated parmesan and pine nuts.
  • If you’re a fan of slightly tart flavours, add two tablespoons of lemon juice just prior to serving.
