- 2 courgettes
- 20g of pine nuts
- 40g of parmesan
- 4 tablespoons of oil
- Lemon juice (optional)
- Carefully wash the courgettes, then cut them into strips using a vegetable peeler.
- Add the salt, pepper and the olive oil. Place in the fridge and let marinate for 1 hour.
- Sprinkle with the grated parmesan and pine nuts.
- If you’re a fan of slightly tart flavours, add two tablespoons of lemon juice just prior to serving.
