- 2 chicken breasts
- 1 well ripened mango
- 1 onion
- 1 skimmed fromage frais
- 1 bottle of soy sauce
- 1 garlic (powdered)
- 1 curry stock
- Dice the chicken breast then marinade the chunks in the soy sauce.
- Cut the onion into small chunks then brown them in a wok in a bit of olive oil. Add the diced chicken to the work and sauté until golden. Add the garlic and pepper, peel the mango and then cut it into small chunks. Once the chicken is done, add the mango and curry stock.
- Leave to simmer, based on how well done you want the mango.
- Remove from heat then add 2-3 tablespoons of fresh cheese. Stir and add seasoning to taste.
- Serve with rice.
