Deriving from a cross between the Cabernet and the Sauvignon varieties, the Cabernet Sauvignon stands out for its ability to produce quality “vins de garde”. The Cabernet Sauvignon, flagship of the Bordeaux, has become the most widespread, popular black grape variety in the world and represents more than 300,000 hectares to date! Its rich, aromatic wines, stand out for the surprising notes of black and red fruits, violets, pepper and long after-taste.
The Versant Cabernet-Sauvignon vines are situated on the sunny south-facing hills near Ensérune (Languedoc-Roussillon). The soil is made up of limestone gravel which helps rainwater to penetrate well and gives mature aromas and tannins. Control of yields via optimal management of nutrition and de-budding.
Alcoholic fermentation in stainless steel, temperature controlled vats. Long maceration of 3 to 4 weeks with twice daily pumping over. Malolactic fermentation.
8 months in stainless steel.
Deep garnet color. Powerful aromas of red fruits, spices and licorice. Generous on the palate with hints of ripe strawberries, sweet peppers and eucalyptus.
Serve at room temperature 17-18°C. Cellaring potential : 6 years.
